Candlelight Dinner

Recipes for Scallops with XO Sauce

Clean scallops with running cold water.
Reserve the shells.
Place scallops with shells in a large plate and put in a steamer,
or in my case I use an electric wok and steam for three to five minutes.
Less time needed if you like it raw.
Then add a tablespoon of sauce on top when it's ready to serve.

For the sauce:
Finely chop garlic and chillies mixed with XO sauce (from Asian grocery)
and olive oil in a sauce pan use low heat.
Then add in finely chopped spring onion and parsley.
Mix them well and add on top of the scallops.

That's it.
Very quick and easy.
Same sauce can be used for steam oysters or fish.

Homemade Delicious ~ Dinner Time

It's getting warm and here's a dinner perfect for hot summer days.

Cold soba noodles: cook in boiling water for a couple of minutes and drain the noodles into a colander. Cool it down in running water. Served with dipping sauce which came with the package. You can make your own by mixing Kaeshi sauce and Dashi stock. I've added some white sesame and dry seaweed on top of the soba just to give the noodles a bit more flavour. You can reserved some water from the boiling noodles and added to the sauce at the end of the meal and drink it as soup.

Cold silken tofu with spring onion: slice tofu into your preferable shape. Finely chop spring onion place on top. Add salt and paper, olive oil and sesame oil for seasoning. I like spicy food, so I added a little chilli oil as well. If you like century egg, it would be good to slice the egg and place around the tofu and serve with vinegar and slice ginger sauce.

Garlic prawns: Remove shells and keep the tails on. Heat butter in frying pan, add prawns in and pan fried each side until change colour. Lower heat and add crushed garlic into the pan. Add salt and pepper for seasoning. Served with lettuce and mayonnaise sauce.

Easy?
Super easy!

Homemade Delicious!

I love seafood and crab is one of the most delicious food on earth.
Ginger and shallot crab, Singarpore chilli crab, steam crab...Yum!
It needs some professional skill to cook live crab
but this crab claw dish is very simply to cook.
Same way to cook as prawn tempura and I added some orange juice to batter and
served them with sweet and sour sauce.

Crab Claw Recipe
Dip crab claw into batter (tempura mix from Asian gorcery shop) to coat evenly one at a time.
Shake off any excess.
Add crab claws to sunflower oil and cook for 4 to 5 minutes or until golden brown.
Use a slotted spoon to transfer crab claws to a tray lined with paper towel.
